Zucchini Frit-Omelette {Toddler Approved Baby Food Recipe}

I made this to get a bunch of veggies and egg into some baby food and have to admit that we found ourselves eating just as much of it as Levi.

ZUCCHINI FRIT-OMELETTE

Recipe:
2 zucchini, grated
1 small potato, grated (could use left over mashed potatoes)
1 apple, grated
¼ cup onion, finely chopped
2 eggs
¼ cup flour (add more if you like)
¾ cup panko bread crumbs (add more if you like)
1 tbsp fresh grated parm (I love to add feta too but didn’t have any)
1 tsp salt
1 ½ tsp Italian seasoning

1. Mix it all together well

2. Fry in a pan of oil (2-4 tbsp grapeseed oil is what I used) on med-high heat




Variations you might like:
Replace Italian seasoning for curry spices and add garlic
Replace potato and apple for yam and pear and add some sage and thyme


We liked this as a side to egg, tomato & spinach sammies (sometimes its nice to eat breaky for dinner!)

Keep leftovers in fridge and you can serve them cold for a quick lunch or snack
